Between my husband and I, I am the one with the most appetite. I’m the person who always has room for “one more bite”. Believe it or not, my husband dreads the word “I’m hungry” and often responds to this remark with “again?” if not “you can’t be … you just ate like 3 hours ago!”. This is how it’s like for us.
Obviously, I am the foodie. In fact, I love trying out new things or trying something different. At a very young age of 10, my Mama would let me have coffee, and I would put ice in it. I had no idea iced coffee was even a thing. I just thought it was good. Trust me when I say that wasn’t the only thing I have tried “converting” before I could even discover that it was a thing.
The most recent one is English muffins. To my surprise, these were only served during breakfast back in the day. Which makes me sad because I could eat them all day. It’s not that you’ll break the law if you do it but it’s like a common practice that people usually obey. Not anymore! My go-to brand? Bays English Muffins. All the way!
Bays English Muffins broke the rule, and it makes me so glad that they do. Bays introduced the new way to enjoy English muffins, and that’s basically eating it not only for breakfast, but also for the whole day! Who would have thought that an English muffin can also be served as lunch, snack, and dinner, right? If you believe that English muffins are created for breakfast only, then you are missing something great.
Bays proved that English muffins could be versatile and can be used as bread for different recipes like sandwiches, panini, mini pizzas, burgers, and more. In fact, I tried different recipes with the Bays English Muffins and recommended it to my friends and family. They liked it, and they even created their own recipes too. Here’s one of my personal favorite that you can try out …
SOUTHWEST SHRIMP, BACON & PINEAPPLE PIZZA
INGREDIENTS
- 4 slices bacon, chopped
- 1-2 teaspoons chili powder
- 1/2 Pound medium raw shrimp, peeled & deveined
- 1 cup fresh pineapple, chopped
- 4 BAYS English Muffins, any variety, split
- 8 Pepperjack cheese slices (1 ounce each)
- 2 tablespoons chopped cilantro or parsley, optional
INSTRUCTIONS
Cook bacon in large skillet over medium heat 4 to 5 minutes or until partially cooked, stirring occasionally. Drain grease; return bacon to skillet. Sprinkle chili powder over shrimp and add shrimp and pineapple; cook 3 to 5 minutes or until shrimp and bacon
are cooked, stirring occasionally.
Meanwhile, toast muffins. Place on baking sheet; cover each muffin half with cheese.
Broil 2 minutes or until cheese is melted. Top with bacon-shrimp mixture. Sprinkle with
cilantro.
SERVES: 4
