Fresh N’ Fruity Pancakes (Instant Hit with Kids)

Welcoming the new year brings about resolution, a promise to better ourselves, and more often than not, eat and live a healthier lifestyle. With a growing little one, figuring out what to to prepare or cook started to become a problem. Let’s be honest, juggling chores, activities, while being a full time mom, and trying to work in between … finding time to cook and making sure it is healthy too is somewhat a far-fetched idea.

Given the circumstance, I have decided that my very first Foodie entry would be a healthy and delicious breakfast recipe. This Fresh and Fruity Pancakes is the perfect answer! In fact, it is super easy to recreate that it will be a great signature meal to serve. Oh and it’s absolutely delicious too!!! Kids (and even picky adults) would love it for sure.

List of Ingredients:

  • 1 Cup All purpose Flour
  • 2 tsp Sugar
  • half tsp Salt
  • 2 tsp Baking powder
  • 1 Cup Liquid Milk
  • 1 Large Egg
  • 1 tspMelted Butter or oil (for each pancake)
  • Fresh Fruits (your choice)

Prep Time: 5-10 minutes
Cooking Time: 3 minutes for each pancake

Fruit Preparation:
You are more than welcome to pick any fruit to include (add) to your pancakes. For this recipe however, I’ve decided to use colourful fruits! First and foremost of all, wash and clean the outer surface of the fruits before cutting them. Cut up the fruits into thin slices. Except for pomegranate, I simply sprinkled it on top of the pancake while cooking.

Pancake Preparation:
Step (1) Get a bowl and prepare all of the wet ingredients – 1 cup of milk and 1 egg. You can also add 1 tsp of vanilla essence and 2 tbsp of melted butter.

Step (2) Mix all of the wet ingredients together and set it aside afterwards.

Step (3) Get another bowl and prepare all of the dry ingredients – 1 cup of all purpose flour, 2 tsp of sugar, half tsp of salt and 2 tsp of baking powder.

Step (4) Mix all of the dry ingredients together.

Step (5) Now that the dry ingredients mixture is ready it is time to get the wet ingredients mixture that you have set aside earlier.

Step (6) With the help of a tablespoon (or small laddle) add the dry ingredient mixture to the wet mixture bowl little by little.

Step (7) Mix the dry and wet ingredients thoroughly until there is no lumps or visible bubbles left.

Step (8) In a frying pan add 1 tsp of butter or any kind of oil you prefer. I personally prefer butter as it adds a deprh of flavor to the pancake. Heat the butter or oil on medium heat and bring it down to medium low once it is heated.

Step (9) Add the batter to the pan and allow the batter to spread by itself.

Step (10) Once the bottom side of the pancake is cooked (check it by carefully inserting a flat spoon under the pancake batter), start to add the fruit slices on top of the pancake.

Step (11) THE BEST PART! More fruits, more colors, more fun! I simply kept adding the fruit slices until I was happy with the outcome and also the colors!

Step (12) Cook on low heat for another 2 minutes. Flip the pancake for a few seconds right before taking it out of the pan; don’t keep it too long on heat after flipping.

Now that you’re done, simply repeat the steps above to create more colorful fruity pancakes with the rest of the batter and fruit slices.

Doesn’t it look absolutely delicious? Best believe this will be an instant fave in your household. My husband likes them with traditional syrup, while I like to enjoy them with real fruit syrup (blueberry, strawberry, etc.). For our son, I warm up some milk and add a dash of brown sugar. Nothing fancy but this is my mama’s go-to dip for my pancakes as I was growing up and I absolutely can’t get enough of it.
